Organic Blueberry muffin Cakes W/cream cheese frosting

 
 
 
Ingredients For muffins:
 
Cupcake liners 12-24
2 C spelt Flour
Organic oatmeal plain 1 C
1 C raw Honey
3/4 tsp Baking powder and baking soda
pinch of salt
1 1/2 C Organic Greek plain yogurt
2 Lg Organic Eggs
4 Tbsp Organic Butter
1 tsp Vanilla
1 C organic blueberries
 
Directions:
 
Heat oven to 375
 
put liners in muffin tin
in med bowl combine flour, oats and baking soda and powder and salt
in a 2nd med bowl combine yogurt, eggs, butter, vanilla and honey, mix by hand till blended
then combine flour with wet mixture
then add blueberries
spoon into liners
bake till golden brown 20-25 minutes
 
For Cream Cheese frosting
 
i used a vita mix but a hand held should work
 
Ingredients:
 
1/2 C almond milk
1 package organic cream cheese softened
Honey to taste (At least 1/4th cup)
a dash or two of maple syrup if you'd like
blend till desired taste and consistency
Top with blueberries if desired!

Peanut Butter Banana Muffins

Peanut Butter Banana Muffins
 
 
These are so yummy and perfect for that just sweet enough treat. I love to flip reciepes and this one was well worth the effort. Im a pretty intuitive home cook so I give the reciepe pretty straight forward.
Enjoy!!!
total time: about 20-30 minutes.
Ingredients
1/3 C organic butter softened
1/4 C Brown rice syrup
1/4 C raw Honey
2 TBS C organic maple syrup
1/2 C organic Peanut butter
2 lg Organic eggs
1 tsp vanilla
3 lg ripe oragnic bananas
2 C spelt flour
2tsp baking soda
1 tsp cinnamon
1/4th tsp nutmeg
pinch of sea salt
3/4 C almond milk
Instructions
1. Preheat oven to 375
2. in a med bowl cream together butter and honey and rice syrup, and maple syrup
add in peanut butter, eggs, vanilla, bananas, and milk.
3. in another medium bowl whisk together flour, baking soda, spices
4. mix all togthere dry and wet slowly
fill cupckae liners 3/4 the way bake 10-12 minutes

Peanut Butter Rice Crispies
Time: about 10-15 minutes
Ingredients:

 


 
 
3 C Organic Brown Rice Crisps ( I use Barbaras)
1/4 C organic butter
1/2 C Organic Peanut Butter
1/4 C Brown rice syrup
1/4 C raw honey
1 tsp vanilla
1 tbs Maple Syrup
Directions:
Use a 9x9 pan Pour in the 3 C of cereal
In a sauce pan over medium heat melt butter, peanut butter, syrup, honey and vanilla. Its done whens its runny like Carmel.
Pour over cereal, mix well.
Put in freezer for 15-20 minutes enjoy :)
